- Sardines—Quality matters when it comes to sardines, which is why I always opt for King Oscar. They’re hand-packed with high-quality ingredients and have a lot of fun flavors to choose from. For this recipe, I like using the Spicy Cracked Pepper. A smoked variety would also be lovely!
- Sweet cherry peppers—You want these from the jar, not fresh. That vinegar-y briny goodness brings a lot of flavor. I go with mild, but you can find hot ones too, if you prefer.
- Cream cheese—I like to mix my goat cheese with a bit of cream cheese for easier spreading. I do a one to one tablespoon ratio. In this recipe I use two tablespoons of each. You could use an herb and garlic or onion variety to jazz it up!

- Baguette—I use a French baguette here which I oil and toast in the oven. For a nice short cut, you could use small toast-like crackers to make your sardine toast.
- Butter—You could use melted butter instead of olive oil.
- Cheese—You could use creamy whipped feta instead of goat cheese, or simply stick with cream cheese if you’re trying to keep things real simple. Adding some grated parmesan cheese would add some nice flavor as well.
- Veggies—Feel free to top these toasts with extra veggies, like tomatoes, ribboned spinach, or caramelized onions.
- Topping—A drizzle of balsamic glaze or pesto would go great over these crunchy toasts!
How to Make This Sardine Toast Appetizer With Goat Cheese
- Preheat the oven to 400º F.
- Slice the baguette into 1/2-inch slices and place them onto a baking sheet.
- Brush the baguette slices with the olive oil and pop them in the oven to roast for about 5-8 minutes, or until they’re just starting to turn golden and are nicely toasted; remove and let cool.
- Pop the goat cheese and cream cheese into a small microwave-safe bowl and heat it up in the microwave for about 15 seconds or until softened enough to whip it up and spread it easily.
- Evenly spread the goat cheese mixture over each crostini, then crack some black pepper on top.
- Top the crostini with slices of sweet cherry peppers followed by a sardine fillet.
- Sprinkle some freshly chopped parsley on top.

You can also toast your buttered baguette slices in a skillet! Just place them down in a hot cast iron pan and toast for 1-2 minutes per side, or until golden brown.

Sardine Toast Appetizer With Goat Cheese
Ingredients
- 8 1/2-inch thick slices of fresh baguette
- 2 TBSP olive oil
- 1 can King Oscar Brisling Sardines With Spicy Cracked Pepper, drained
- 2 TBSP plain goat cheese
- 2 TBSP plain cream cheese
- 4 sweet cherry peppers, sliced; stems removed
- A few cracks of pepper
- Chopped fresh parsley, for garnish
Instructions
- Preheat the oven to 400º F.
- With a serrated bread knife, slice the French baguette into 1/2-inch slices; place them onto a baking sheet.
- Using a pastry brush, pat the baguette slices with olive oil. Place them into the oven for about 5-8 minutes or until they start to turn golden, then remove them and let them cool.
- Put the goat cheese and cream cheese into a small microwave-safe bowl and heat it up in the microwave for about 15 seconds, or until it's softened enough to stir well and spread evenly.
- With a knife, spread the goat cheese mixture evenly over each crostin; crack some black pepper on top.
- Place slices of sweet cherry peppers on top of the goat cheese, followed by a sardine fillet.
