Ingredients

  • 2 TBSP sesame seeds
  • 1/2 cup slivered almonds
  • 2 TBSP olive oil or sesame oil
  • 1 lb sirloin steak strips Sometimes labeled as beef stir fry strips
  • 1 green bell pepper, thinly sliced into strips
  • 4 garlic cloves, minced
  • 2 TBSP dry white wine You could also use mirin or rice vinegar
  • 1/4 cup low sodium soy sauce
  • 6 scallions, sliced into 1-inch pieces (about 1 cup)
  • 2 packages of Instant Ramen noodles, cooked Discard the flavor packet.

Instructions

  • Cook the Ramen noodles in a pot as per the package’s instructions. When done, strain them and set them aside.
  • Toast the sesame seeds and almonds. Heat a dry skillet or wok over over medium-low heat. Add the sesame seeds and almonds and toast them, shaking the pan often to prevent burning. When lightly toasted and golden, remove the pan from the heat and transfer them to a small bowl; set aside.
  • Cook the beef. Add the oil to the same skillet or wok and heat it over medium-high heat until it shimmers. Add the beef strips and cook for about two minutes each side—just enough to brown the exteriors with a medium-rare center. Transfer the beef to a plate or bowl; set aside.
  • Cook the veggies. Add a bit more oil to the pan if necessary. Add the garlic, scallions, and bell peppers and cook until tender (3-5 mins.), stirring often. When tender, bring the beef back to the pan. Add the wine and soy sauce and let the liquid come to a simmer for about a minute to thicken. Stir every so often to prevent it from burning.
  • Add in the cooked Ramen noodles, toasted sesame seeds, and the toasted almonds; toss to evenly coat in the sauce. Enjoy!

Notes

If you have time, to ensure super tender beef just like you get from Chinese takeout, you can whisk together some cornstarch and soy sauce, then toss your beef strips into it and let it marinate for 15 minutes prior to cooking. (I suggest approx. 1 TBSP of cornstarch per 1 lb of beef and about 1/4 to 1/3 cup of soy sauce.)
